Certified in organic conversion since late 2019. Vinification: Hand harvested grapes. The grapes are destemmed and macerated in vats for approximately two weeks, undergoing daily pump overs and punch downs. Aging in oak barrels imparts character and finesse, yielding more elegant tannins.
