Viticulture: Organic (Ecocert, 2019) and biodynamic methods, guyot pruning. Vinification: No added SO2 during vinification. Pressed with whole clusters, settled to remove the thick lees, ambient yeast fermentation and aging for 12 months in barrels (0 20% new). No fining, some filtration when necessary. SO2
