Extractions are always gentle with the number of punchdowns and pumping over adjusted to the conditions of the vintages and the terroir. The Pinot Noirs are aged for 12 months in oak barrels, with around 20% new oak before being aged for another six months in vats before bottling. The red wines are neither fined nor filtered.
