Drained off, dug out and pressed back to tanks to go dry. Racked to stainless for bottling. No fining or filtration, a bit of sulfur at bottling. Personality: Somewhere between Beaujolais, tropical fruit punch and strawberry Kool Aid. Best served slightly chilled.
