The fruit comes from the Kinheimer Hubertuslay, a south facing grey and blue slate vineyard. The vines are 45 years old and the vineyard is very steep. The fruit is gently pressed, then fermented and aged for 7 months on the lees in large old Foudre. The wine is bottled with no filtration or sulfitage.
