The wine enjoys a traditional élevage of 12 months in barrel (20–25% new oak) before resting another 6 months on fine lees in stainless steel tanks to maintain vibrancy and clarityy without the need to fine or filtered

Bottling just prior to the end of fermentation with no sulphur additions

No yeasts are added except those from the grapes and from the cellar
