The grapes are direct pressed then fermented and aged for one year in double barrique
2024 I Vigneri di Salvo Foti 'Aurora' Etna Bianco, Sicily, Italy Sud-Ouest Winemaker James Jelks: This cuveeFun Facts: Aurora (which means dawn in Italian) is also the name of a small and graceful native butterfly that's currently at risk of extinction. These can often be spotted in the vines and inspired the wine's name and label. Winemaking: Whole clusters are direct pressed and left to settle for 30 hours. Natural fermentation takes between 15 20 days. The wine is then aged five months in stainless steel tanks. importer's note
