Kimmeridgian marl and limestone. Viticulture: Certified sustainable (Ampelos) since 1996 Vinification: Indigenous yeast fermentation in stainless steel tanks, aged on fine lees. Cellared for 30 months with organic yeast sur lattes. Extra Brut.
