Like many of the coffees Yamabiko's purchase from Colombia, producer Jhonatan Ruiz is part of the Monkaaba group in San Agustin, Huila. San Agustin is a small colonial town surrounded by lush mountains, home to hundreds of small coffee farms. Yamabiko approached this coffee as a filter profile, aimed to maximize juicy fruit notes with delicate floral aromas and sugar sweetness
